about us

Watermark Grill is the second restaurant to open under the direction of Texas entrepreneur Patrick J. Kennedy and his Watermark Hotel Company. The Watermark Grill joins critically acclaimed Brasserie Pavil in bringing a casual yet sophisticated dining experience to San Antonio.

Along with one of San Antonio’s top chefs, Scott Cohen, Kennedy has planned every aspect of the distinctive restaurant - all with an eye on offering the freshest and most robust selection of seafood available in the city.

Watermark Grill promises to provide a standout experience unique to its space and the well-seasoned culinary skills of its professional staff. The warm interior of relaxing coral orange, sand, pearl and Mediterranean blue evokes the moods of the sea, as the senses delight in the drama of open-flame cooking and the bounty of the inviting Raw Bar. Meanwhile, the exciting bar fuels the passions with gourmet fresh infusions, classic cocktails and wines of the world.

Informal. Upscale. Spacious. Intimate. Relaxed. Professional. Celebratory. The Watermark Grill vibe is as diverse as the dishes it presents. Ride the wave to a fresh new experience.

Meet Watermark Grill's acclaimed Corporate Executive Chef Scott Cohen as he fathoms the depths for the finest fins, shells, chops and flavors just for you.

we net the best for you

Every day, my chefs and I examine and select from hundreds of pounds of fresh-caught seafood, the minute it arrives from around the world. Thanks to improved fishing technology and faster-than-ever transportation, we can offer discerning San Antonio diners the pure flavors of fresh and saltwater delicacies just hours out of the water.

We've designed our Raw Bar to be like a seaside resort. Leisurely select your own platter of fresh clams, shrimp, mussels, oysters and whatever else is right for the day.

Meanwhile, we'll be whipping up some pretty mean recipes in the kitchen, drawing our inspiration from the cuisines of the world, matching the unique flavor of each seafood specialty with a savory counterpoint.

You'll also see some fiery action at the wood grill and spit roaster as we imbue our steaks, chicken and meats with the hearty character of natural smoke.

I'm certain you'll enjoy chilling out at the cocktail and raw bars, and being pampered by our outstanding staff. We look forward to giving you the very best of everything - from sea, land and air - at Watermark Grill.

"At any restaurant, teamwork is important, but at the Watermark Grill, a wide-ranging and ambitious menu makes the communication between knowledgeable servers and the kitchen even more crucial."

texas monthly review

11.26.2009 / texasmonthly.com
"Glittering Reggiano’s has been recycled: The pizza oven now grills fish, an icy raw bar is just adjacent, and cobalt blue punches up the maritime decor. The patio and outside bar still exude urban charm, with plush seating for the latter and orange umbrellas over all. As with the sibling hotel restaurant downtown, you’ll find lots of fresh seafood, with mix-and-match sauces, preps, and pedigree. A leisurely lunch kept us in the swim with crispy calamari to start, a generous grilled flounder, and (for the non–seafood lover among us) a luscious coconut milk–infused Thai beef salad. Made-on-premises seven-layer carrot cake took us on a deep dive into sugar, spice, and cream cheese, and we hardly wanted to come up for air. Service was excellent, which is notable, considering that our visit was two days into the soft opening. Bar."
